Kicking things off

Your unforgettable dining experience begins in our iconic wine and cocktail bar downstairs. Here you will be greeted by some of the best mixologists in the country, sampling cocktails that have been expertly curated by our talented team of bartenders.

Indulge in a signature Dulse martini with Lunun Gin, dulse seaweed, saline and caviar.

Alternatively, breathe some life into your evening after a long day with The Elixer. A delicious blend of Lunun Gin with Aelder Elderberry liqueur.

Prefer the allure of a crisp glass of wine? Explore our extensive list, a loving tribute to Europe's finest selections. Focusing on Old World wines, we've curated an exceptional array from Armenia to Portugal, promising a journey of tasteful discovery.

To pair with these wonderful drinks, we recommend trying some of the finest oysters available on Scotland’s shores. Every week we have a whole host of new flavours and toppings to try so you’ll be absolutely spoilt for choice when you join us.

 

Climb the stairway to heaven

After a few libations, we invite you to head upstairs and visit the iconic dining room upstairs. This bright, inviting area will be where the team take you on the most unforgettable culinary journey.

All of our dishes are brought to you by the award-winning Chef Dean Banks and his hardworking team. We aim to showcase the best of what Scotland’s bountiful waters have to offer, and our menu changes regularly to reflect the seasons in which these ingredients are at their peak.

One of our current menu favourites has to be the whole Champagne baked turbot. The King of the Sea is baked with shallots, leek, fennel, and carrot and basted with Champagne every five minutes throughout the cooking duration. It is then left to rest for around fifteen to guarantee the most juicy and tender piece of fish.

We then take the resting juices and Champagne and make this into a white wine sauce, adding fish stock and double cream before finishing with chives and parsley oil to create the vibrant green sauce that you see in the photo.

Of course, this decadent dish would only be complete with adding the iconic Exmoor Caviar. A truly unforgettable culinary experience we cannot wait for you to enjoy.
