The team at Dulse, a charming seafood restaurant nestled in the heart of Edinburgh, have prepared a remarkable Christmas menu that is sure to delight your taste buds and create unforgettable memories.

At Dulse, we like to do things a little differently during the festivities. Our Christmas menu is still a homage to the incredible ingredients that Scotland’s shores have to offer. You’ll be relieved to know that there is not a piece of turkey in sight. That can be saved for the big day.

To Begin

As you step into Dulse, you'll be welcomed by the warm and inviting atmosphere that perfectly complements the holiday season. To kick off your Christmas feast, you have two delightful options.

Bread with Sustainable Butter: Start with the basics, but at Dulse, even the simplest of dishes are a treat. The freshly baked bread, served with sustainable butter, is a comforting way to begin your culinary adventure. All of our butters are made using flavour-packed ingredients from the kitchen, ensuring nothing goes to waste. It may sound like ‘bread and butter’ but wait til you taste it.

Cumbrae Oysters with Seasonal Dressings: If you're in the mood for something that is truly Dulse, Scottish oysters with seasonal dressings are a splendid choice. They are a delicacy, and the accompanying dressings add a burst of flavour to every bite.

 

Starters

After the delightful appetisers, it's time to dive into the starters. Dulse offers a trio of tantalising options, showcasing our commitment to using the finest ingredients available in Scotland.

Trout Pastrami with Katy Rodgers Crème Fraiche: A Dulse OG that has been on the menu since day one. Delicate flavours of trout pastrami are paired with the rich creaminess of Katy Rodgers Crème Fraiche and rye crispbreads to create a harmonious blend of tastes and textures. This truly is a starter that sets the bar high for the rest of the meal.

Arbroath Smokie Tart with Dulse Seaweed: The Arbroath smokie tart, with its hint of smokiness and the unique addition of Dulse Seaweed, is a seafood lover's dream. The flaky crust complements the rich, smoky filling perfectly. While the Dulse seaweed packs a remarkable umami punch.

Fun fact: this is Dean’s favourite item on the menu.

Crapaudine Beetroot with Chicory and Balsamic Cream: For those who appreciate the earthy sweetness of beets, the Crapaudine beetroot dish is a true gem. The chicory and balsamic cream add depth and sophistication to this vibrant and colourful plate.

 

Main Course

The main course is where Dulse truly shines, offering a range of options that cater to various palates and preferences:

Roast Cod with Crushed Celeriac and Brown Butter: The roast cod is a testament to the culinary expertise at Dulse. Perfectly cooked cod is accompanied by crushed celeriac and brown butter, is a marriage of flavours that will leave you feeling all warm and fuzzy inside.

Pan-Fried Hake with Sunflower Seed and Truffle Pesto: hake is known for its delicate flavour and flaky texture, and Dulse elevates it to another level with sunflower seed and truffle pesto. It's a dish that exemplifies creativity and taste, alongside some incredible textures and rich flavours. 

Butternut Squash with Spiced Pumpkin Puree: For a vegetarian option, the butternut squash with spiced pumpkin puree is a warm and comforting choice. The spiced puree enhances the natural sweetness of the squash, making it a perfect dish full of winter flavours.

 

Sides

To complement your main course, Dulse offers a selection of sides that are equally enticing. From the flavourful Dulse potatoes to the fresh and vibrant baked brassicas with salsa verde, and the heart-warming roasted brussels sprouts with chestnuts.

 

Desserts

No Christmas meal is complete without a little something sweet to round things off.

Dulse Chocolate Pavé: chocolate lovers will swoon over the iconic pavé. It's a heavenly concoction of rich, dark chocolate that melts in your mouth. A firm favourite that has been on the menu since we opened last year.

Yuzu Posset: the yuzu posset offers a refreshing contrast to the preceding courses. The zesty yuzu flavour and smooth, creamy texture make it a delightful and light choice to round off your meal.

 Tiramisu: the classic Italian dessert is given the unmistakable Dean Banks treatment. The layers of coffee-soaked ladyfingers and mascarpone cheese are a comforting and traditional way to finish your culinary experience with us.
