“First time here. Popped in on a Thursday lunchtime and wasn’t full but nice atmosphere upstairs for dining. Singapore mussels were so delicious for starter and I loved my halibut main. Service really lovely and good wine by the glass. Half lobster was a bit smaller than anticipated but tasty. Do t exoecf to get in and out quickly, it was an hour til we got our mains (we weren’t in a rush so wasn’t a problem but be aware!) One for the Fish Fanatic !

I visited Dulse with my son and his partner for the Sunday tasting menu on Mother's Day. As always, the food was excellent and innovative without being outrageously so, and the service was delightful and attentive. This was probably about my 8th visit (I am a local) and I have a tendency to stick to my habitual orders (Arbroath Smokie tart, the crumpet and the chocolate device) - but the tasting menu enabled me to broaden my horizons. The oysters were fantastic - I stuck to plain but my companions had the Bloody Mary and Sea Buckthorn versions and all agreed they were wonderful. The mussels were in a light, Asian style broth with just the right amount of spicing and were fresh and delicious. The salmon pastrami is light and tasty and makes a much needed change from the eternal Edinburgh smoked salmon - but probably the star dish was the roast cod in a miso sauce - perfectly cooked, elegantly glazed and in a herby miso sauce which we polished off to the last drop. We loved out Mango Eton mess, but couldn't resist a chocolate device to share, and ....of course it didn't disappoint. The 5 course tasting menu (ex lobster) is £35 and a real bargain considering the quality, variety and quantity of ingredients and the skill in the kitchen.

Dulse isn't for everyone, however - you will love it if you adore fish but it is uncompromising on the rest of the menu. I think that this is one of its strong points, but veggies and meat eaters beware - there isn't much for you apart from potatoes (which usually are cooked with seaweed), one veg dish, bread and the puddings. I hope they don't consider changing the formula because if they do, I will never be able to get a table again ! It has got to be one of the best restaurants in Scotland, and perhaps the whole country. I don't mind the "small plate" format, which I. usually detest - the plates are actually pretty substantial and you could easily treat them as separate courses. The mains sort of add to the confusion, but whatever....you can have a starter a main and a pud as you might do ordinarily, a couple of starters, or any permutation or combination you like. There is also a curious distinction between the upstairs restaurant and the downstairs wine bar. In fact the same menu prevails in both areas, with most people having a drink downstairs and then ascending for the main event. I rather prefer the quieter, more intimate wine bar, and tend to remain there, where you can sit on comfy banquettes, it's more quiet and the service is very attentive and personal. The tempo picks up significantly later in the evening when a young cocktail crowd descends...and they seem to serve up every concoction imaginable.

Cliches. Platitudes. Folklore. Has always fascinated me. There’s no rainbows without rain. There’s no gold at the end of the rainbow. Well we found the gold. The golden rainbow even. A marvellous Irishman by the name of Caolán made Dulse sparkle for us. Pure technicolour service. A hospitality master class. Immersed in deliciousness:. Excellent

We had a Sunday taster menu, it was excellent. Service was really good, guy recommended rose wine which was as he described and we like. All 5 courses were really good, the taste and the presentation. On the taster menus for desert was Eton mess which is not something that we would go for usually but it was excellent, best Eton mess we have ever had.

What a fantastic restaurant. Food was amazing, staff very friendly.
Dean was in the restaurant and spent time with us explaining all his dishes and making recommendations.
One of the best restaurants we have visited. Will definitely be returning next time we are in Edinburgh.
