“I have walked by this new restaurant a few times over the Summer, in the spot that used to belong to one of the Escargots, an Edinburgh stalwart, and was keen to try it. I'm very glad I did.
They source good seafood and they prepare it well, relatively simply but with immaculate technique, and with little imaginative twists and turns that make every dish interesting.
We loved the three small dishes we had before a larger one: a plump and moist octopus tentacle with burned tomato and citrus barley; a delicious and creamy Arbroath smokey tart with seaweed; and a classy raw scallop (Orkney), the thin slices tasting fresh and sweet and almost buttery, coming with umeboshi (i.e. pickled in the Japanese style) plum, elderflower and strawberry. How to elevate splendid raw produce with few elements that enhance, rather than compete with, it. Brilliant.
The main was a classic whole Lobster Thermidor, less cheesy than most I've had, and for this reason with the fantastic boozy fishy smoky sauce delivering a clearer impact. Needless to say, the lobster was cooked to perfection.
Portions are small. However, for a fiver you can have a whole loaf of rather special tin bread (with accompanying butter) that is quite filling: recommended. We also had a very well charred pointed cabbage. There were a couple of dessert options, including a tempting chocolate pave', but we skipped.
Prices are full, no two ways about it, but all in all commensurate to the quality, the location and the times. They follow the unwelcome new trend (in Edinburgh) of automatically adding a service charge (10%), thus depriving the customer of the pleasure of making this gesture him/herself. The wine list has some interesting choices and is not bad value for Edinburgh, with less crazy markups than average. Our service team featured a jolly and energetic manager taking orders and explaining the menu, and two professional young waiter and waitress. The atmosphere for this lunch was easygoing and quiet. “A great new place for Scottish seafood.
We were particularly impressed by the whole lobster thermidor, tender and succulent meat in a creamy sauce, and the meat tasted even sweeter and was firmer at the claw and knuckle. The highlight of our meal.
We liked the octopus as well, a single well grilled and tender tentacle complimented by burnt tomato and citrus barley sauce which were nicely presented on plate.
We had our oysters natural and they tasted relatively mild, good yet not among the best we have had in Scotland. Cocktails were just alright, though we didn’t come for that” - Kenneth Li

We spent a really nice 2 hours at Dulse. Dulse has a modern, fresh feel to it. Service is great and assuming you like seafood and fish, this is the place for you - quality produce, well cooked and put together - leaving you feeling as if you have had a high quality dining experience.
Prices are about right for the quality you get.

I meant to take pictures of the food for the review, however turns out they looked that good i dug in before the camera could come out of the pocket
I think we pretty much tasted all the menu plus 3 loafs of bread!
My favorite being the lobster crumpet! So juicy and tasty could of eaten more of them but the other 12 plates were arriving.
Love the idea that it comes as and when so you gradually get through everything, just needed a bigger table for all out plates
I think its seafood with a twist, lost of flavors with an Asian twist. Plenty of spices and sauces which are epic!
Cocktails on point cannot go a miss.
All in all a great experience. Will certainly be back!

3 friends (all local to Edinburgh) 3 small plates, 2 large plates, 2 sides, 2 desserts, 1 bottle wine, 1 coffee. Not got a bad word to say about anything. Our small plates were all fabulous but arbroath smokie tart just pipped. The main dish of hake was small ish but prepared beautifully with gorgeous sauce. Chocolate Pave dessert smooth and crunchy, perfect end. Will definitely recommend to fish loving friends (no meat/veggie except vegetable sides). If I could change anything would request larger plates in general and serving spoons should be provided when all dishes to share (arrived on request). I eat out a lot and best new place in Edinburgh for a while.

First visit and our group of four thoroughly enjoyed it. We started with oysters and then shared a variety of dishes with delightful home made bread and a side dish of tasty potatoes, we also shared a lovely Albarino to accompany all of this delicious food. It was our first visit but it won't be the last.
PS - staff were really attentive and helpful.
