At Dulse, we are one of Edinburgh’s newest seafood restaurants. Located in the heart of the West End and just a short walk from Princes Street. Brought to you by the award-winning Chef Dean Banks, our team will take you on a truly unforgettable culinary journey through Scotland’s shores.
Open seven days, you can find us on the iconic Queensferry Street. Let’s get into what you can expect from Dulse during this year’s Edinburgh Fringe Festival.
Lobster crumpet lunch
Nothing is more synonymous with Chef Dean Banks than the iconic St. Andrews Bay lobster. This has been a real hit with our guests since day one, and we’ve decided to bring it back as a unique lunchtime offering for the duration of the Edinburgh Fringe. Two courses for only £29 are available Thursday through Saturday until the end of August.
We delicately warm the succulent lobster in a luscious beurre noisette, that infuses it with a subtle, nutty essence. Nestled upon an artisan crumpet, spread with our iconic Dulse butter, the lobster finds its perfect partner.
But we don't stop there; we further elevate this culinary symphony to new heights. Before serving, we artfully blend zesty lemon, tangy lime, and vibrant grapefruit into the beurre noisette. Marrying citrusy goodness with the rich, decadent lobster creates an unforgettable symphony of flavours.
In every bite, you'll experience the delightful contrast of flavours, as the citrusy notes gracefully cut through the lobster's velvety richness.
Dulse tasting menu
Our iconic tasting menu will be available Sunday through Wednesday during the Fringe. Enjoy five delicious courses featuring some of our favourite dishes since opening last year.

Enjoy a cocktail handcrafted by our talented bartenders. Created from Scottish spirits, foraged items, ferments, pickles, and syrups.
Our menu changes pretty regularly, with seasonality playing a crucial part in everything we do. But don't worry. You will always be able to find the classics on there too.
Indulge in a signature Dulse martini with Lunun Gin, dulse seaweed, saline and caviar. Alternatively, breathe some life into your evening after a long day taking in some shows with The Elixer. A delicious blend of Lunun Gin with Aelder Elderberry liqueur.

We expect to be extremely busy during the Edinburgh Fringe Festival, so we would always recommend booking a table before joining us. We do keep a limited number of spaces for walk-ins, but these fill up pretty quickly.
