Seafood that is caught fresh and delivered daily

We couldn’t bring you the best of what Scotland’s shores have to offer without it being the freshest and most delicious seafood around. Our team works closely with all our suppliers to ensure that we bring you the best. We only use local ingredients in the kitchen here, too, so you can rest assured that travel is kept to a minimum with all of our seafood. The lobsters, for example, are caught daily in St. Andrews Bay. Metres from our sister venue, Haar Restaurant.

Our cocktail menu is the stuff of dreams

Carefully curated by the Dulse bar team. You won’t find any of our creations on another cocktail menu. That being said, if you enjoy the classics, fear not. We still offer many of those, albeit with a little Dean Banks twist. Take our Dulse Martini, for example. On the face of things, it is still a classic gin martini. We have added a little pizzazz to our one, though, infusing Dean’s very own Lunun Gin with seaweed. This is also served with some caviar, in true Dulse style. You know how we do.

We have an extensive wine list that pays homage to the best European selections. Focusing on Old World wines, our team have sourced some fantastic wines from Portugal to Armenia, and they will always be on hand to advise on the best fit for your tastes, don’t worry.

At Dulse, we hold storytelling at our core, and this really shines through with the food and drink options from our menus. Each item on there has been meticulously thought out and has a tale to tell. Take our Wedding Martini, for example. One of our team, Connor, created this to be enjoyed at owner Dean’s wedding. Everyone enjoyed the cocktail so much that it has become a permanent fixture in our bar.

We have been open for quite some time in Edinburgh’s West End, and it has been an incredible journey to our opening in the capital.
