No visit to Dulse would be complete without some delicious oysters and a glass of Charles Heidsieck Champagne, would it?

Relax in our downstairs bar area, sip on a glass of bubbly and indulge in some of the finest oysters that Scotland's shores offer.

We change our oyster flavours quite often. This is because our kitchen team tries to be as sustainable as possible and cook with every ingredient to its last feasible use.

Currently, you can expect to enjoy our coveted Bloody Mary oysters. Fresh tomatoes from Falkland Kitchen Garden, blended with gochujang and miso. Our take on a delicious Bloody Mary bursting with spice and umami.

Of course, you can enjoy your delicious oysters as they come, simply with a squeeze of lemon. Just one bite will transport you to Scotland's breathtaking shores.

Sip on a cocktail or two at the Dulse bar

It wouldn't be one of Edinburgh's best bars without a creative and varied cocktail menu.

Our relaxing, inviting bar area is perfect for those after-work drinks, a special date night, or that long-overdue catch-up with a friend.

Enjoy a cocktail whipped up by our talented bartenders. Created from Scottish spirits, foraged items, ferments, pickles, and syrups. Our menu changes quite often, with seasonality playing a crucial part in everything we do. But don't worry. You will always be able to find the classics on there too.

Indulge in a signature Dulse martini with Lunun Gin, dulse seaweed, saline and caviar. Alternatively, breathe some life into your evening with The Elixer. A delicious blend of Lunun Gin with Aelder Elderberry liqueur.

Is a glass of wine more up your street? Fear not! We have an extensive wine list that pays homage to Europe's finest selections. Centring around Old World wines, the team has sourced some incredible wines from Armenia to Portugal.

Have a delicious dinner cooked by Chef Dean Banks

While our bar area is the perfect setting for your next evening out, we wouldn't list our favourite things to do at Dulse without including dinner prepared by the man himself, Chef Dean Banks.

Our menu focuses on small plates that hero a key ingredient, supported by some delicious, seasonal components. Dean and the team will truly take you on a journey through Scotland's larder and impressive shores with every bite.

All our ingredients are sourced locally, with seasonality in mind always. Due to this, our menu changes regularly. You can expect to find some delights, such as our St. Andrews Bay Lobster Thermidor – a Dulse rendition of the culinary classic. Or, harissa marinated barbecued mackerel served with a vibrant kachumba salad.
